In December Moncalvo returns to its peasant roots. Under the ancient porticoes of Piazza Carlo Alberto the large Piedmontese cattle arrive, the breeders prepare the animals for evaluation and from the early hours of the morning the air is filled with the scent of broth, tripe, chickpeas and mixed boiled meat. The National Fat Ox Fair is one of the oldest and most recognizable livestock events in Piedmont and one of the events that best illustrates the relationship between agriculture, breeding and cuisine in the Monferrato.

Coming to Moncalvo on this day means witnessing something very different from a normal festival. The protagonist is first and foremost the animal: the so-called white giants are exhibited, observed by the jury, weighed and rewarded with traditional caparisons. The Agricultural Fair, the food and wine market, the Boiled Meat Festival and a series of initiatives involving restaurants, producers and cultural places in the city develop around the livestock exhibition.

When the Moncalvo National Fat Ox Fair takes place

The National Fat Ox Fair takes place every year on Wednesday in the week in which the feast of the Immaculate Conception falls. This is the formulation used by the Municipality of Moncalvo to describe the traditional cadence of the event and allows you to identify the period without tying the page to a specific date.

In recent years the main fair has fallen at the beginning or first half of December and is often accompanied by a larger calendar of gastronomic and cultural events spread over the surrounding days.

A fair dedicated to animal husbandry

The main venue is Piazza Carlo Alberto, where the historic arcades become the parade ground for the cattle entered in the competition.

The event still maintains a strongly agricultural identity today. Before the tastings and the market there are the animals, the breeders, the veterinarians, the jury and the work necessary to present garments that require years of selection and care. It is precisely this authenticity that distinguishes Moncalvo from many gastronomic events built exclusively for the tourist public.

Almost four centuries of history

The roots of the Fat Ox Fair date back to the first half of the seventeenth century. Local historical sources document Moncalvo markets and cattle fairs already in the first decades of the 17th century, while institutional tradition places the birth of the event in the second half of the 1630s.

Originally, cattle also had a fundamental function in agricultural work. Before mechanization, the ox pulled plows and carts and accompanied life on the farms for years. At the end of their careers, the best animals were fattened and taken to fairs, where they were evaluated and sold in preparation for the winter period and the holidays.

With the spread of tractors, the function of the working animal disappeared, but the culture of quality breeding remained. The fair has therefore changed its meaning without losing the connection with its history: from an indispensable agricultural market it has become a livestock exhibition, a gastronomic event and a moment of collective identity.

The white giants: the Piedmontese race

The animals that attract the public's attention are the large Piedmontese cattle, characterized by their light coat and notable muscle mass. Zootechnical selection has made this breed one of the symbols of regional breeding and Piedmontese meat production.

Seeing them up close under the porticoes allows you to really perceive their dimensions. Photographs and numbers do not give the same impression of an adult animal weighing over ten quintals stopped a few meters away, followed by the breeder who has raised it for years.

Ox, beef and other categories

The review does not include just one category. The regulation of the single edition can distinguish oxen, steers and other bovine classes based on age, characteristics and zootechnical requirements. The animals are entered into the competition, checked and subsequently examined by the jury.

It is not necessary for the visitor to know all the technical criteria. Stop to listen to the farmers' explanations and observe the differences between the animals: structure, proportions, musculature and general condition are much more evident when the animals are gathered in the same space.

The jury and the prestigious caparisons

One of the most awaited moments of the morning is the work of the jury. Experts evaluate the animals in different categories and choose the best animals, which are then publicly rewarded.

The caparisons awarded to the winners are one of the most recognizable symbols of the Moncalvo Fair. Their delivery represents recognition of the breeder's work and the quality of the animal, long before being a simple scenographic moment for the public.

Weight estimation

Among the most curious traditions is the estimation of the weight of large cattle. The public can look closely at the garments and try to imagine how many kilograms they reach, while the organization tests the eye and experience of the participants.

It is a light but useful moment to realize the extraordinary dimensions of these animals. Large show oxen can reach weights well over one ton, the result of years of breeding and very specific selection.

From the stable to the table: mixed boiled meat

If the ox is the zootechnical protagonist, the mixed boiled meat is the gastronomic protagonist. During the fair, the Pro Loco organizes the distribution of the traditional boiled meat in the heated palatenda in Piazza Carlo Alberto, with a service that normally continues for several hours.

The Piedmontese preparation comes from the use of different cuts of meat cooked slowly and served together. At Moncalvo boiled meat is not a seasonal trend: it is part of the gastronomic identity of the city and has accompanied the fair for generations.

Buji tut al di

The Piedmontese expression Buji tut al di, used in the event program, recalls the continuous distribution of boiled meat throughout the day. It is a perfect image of the fair: outside the cold of December and the animals under the arcades, inside the palate steaming dishes and shared tables.

Broth, tripe and chickpeas from the early hours of the morning

The day starts very early. Among the most characteristic traditions is the morning distribution of a bowl of broth with tripe and chickpeas, offered in the early hours of the fair. It is not a dish designed for elegant gastronomic tourism: it is a robust breakfast that comes directly from agricultural culture.

To really experience the atmosphere of the event it is worth arriving early at least once. The cold, the steam of the broth, the voices of the farmers and the animals just placed under the porticoes show a very different fair from the busier one at lunch time.

The Fat Ox Gastronomic Review

The main day is accompanied by a gastronomic event involving restaurants and structures in the Moncalve area. In the days close to the fair, menus dedicated to beef, boiled meat and traditional cuisine are offered.

The formula changes every edition and the list of restaurants is published by the organization. If you want to experience a more peaceful lunch than in the palatenda, booking one of the participating establishments can be a good choice, especially if you are staying at Moncalvo for a weekend.

The boiled meat baths

Piedmontese boiled meat never arrives alone. Bagnet verd, bagnet ross, mustard and other sauces accompany the different cuts and allow you to completely change the character of each bite.

Try the meat without seasoning first and then try the sauces. It's the best way to understand the quality, texture and flavor of the cut before adding acidity, herbs or sweet notes. Even this small gesture makes tasting more conscious.

The Agricultural Fair

Piazza Carlo Alberto also hosts the Agricultural Fair, which attracts exhibitors and activities linked to the rural world. Agricultural machines, products, tools and services bring the event back to its origins and remind us that the Fat Ox was born first and foremost within a country economy.

For those who visit Monferrato only as a tourist it is a useful section because it shows what normally remains behind the landscape. Vineyards, fields and farms exist thanks to businesses, techniques and daily work: the fair makes at least part of this reality visible.

The food and wine market in Piazza Garibaldi

Piazza Garibaldi normally hosts the food and wine market, with local products and specialties also suitable for those who want to take home a souvenir of the day. Cheeses, cured meats, wine, honey, sweets and other products complete the livestock part.

Do a complete walkthrough before buying. Ask about provenance and production method, and use the fair to discover companies you might visit later. In a territory like Monferrato the producer is often just a few kilometers from the stand where you met him.

De.Co. products by Moncalvo

The fair program also makes reference to De.Co. products. moncalvesi, i.e. the productions that the Municipality valorises through the Municipal Designation. They are products and preparations linked to the local gastronomic history and represent a way to distinguish what specifically belongs to the identity of the city.

During your visit, look for these references among the stalls and in the catering activities. They help build a more local experience compared to a generic purchase of Piedmontese products.

Piazza Carlo Alberto and the ancient porticoes

Piazza Carlo Alberto is the heart of the event and one of the most important places of Moncalvo. It stands in the area of the ancient castle of the Marquises of Monferrato and preserves towers, walls and long porticoes which during the fair become the shelter for the cattle.

The scene of the large white animals lined up under the arches is probably the most recognizable image of the event. But stop and also observe the architecture: those porticoes and fortifications tell of centuries of urban history, well before the modern fair.

Bastions, walkways and Belvedere Bonaventura

From the bastions of the ancient castle one of the most beautiful views of the Lower Monferrato opens up. The walkways connect the surviving towers and allow you to observe the hills from a dominant position.

During Bue Grasso day it is worth leaving the palatenda for a few minutes and reaching the Bonaventura Belvedere. In winter the landscape is bare and bright, very different from summer views: fields, woods and small villages emerge with a more evident geometry.

The Wine Shop

Inside the castle walls there is the Moncalvo Wine Shop, a point dedicated to local wine production. When open, it is a natural stop for those who want to combine boiled meat with a more in-depth knowledge of local wines.

Barbera, Grignolino and other names of Monferrato accompany winter cuisine well. If you must drive, limit or avoid tastings and plan your visit responsibly.

The Church of San Francesco and Guglielmo Caccia

The Church of San Francesco is one of the main artistic landmarks of the city. It preserves works by Guglielmo Caccia, known as Moncalvo, and his daughter Orsola Maddalena, central figures of Piedmontese painting between the sixteenth and seventeenth centuries.

After a morning among animals and the market, entering San Francesco offers a clear change of pace. The visit helps to remember that Moncalvo is not just a city of fairs and gastronomy, but a historic center with a surprisingly rich cultural heritage.

The Civic Museum

The Franco Montanari Civic Museum and Gallery of Modern Art is another possible cultural stop. In several editions of the Fat Ox Fair, an extraordinary opening was scheduled during the day.

The Municipality collects information on visits to the museum.

The Synagogue and Jewish history

Moncalvo hosted an important Jewish community for centuries. In Piazza Carlo Alberto the façade of the ancient Synagogue is still recognisable, while outside the center the Israelite cemetery is preserved.

The place adds a little-known chapter to the history of the city and can be easily observed during the walk between Piazza Carlo Alberto and the streets of the center.

How to organize the day of the fair

First morning: arrive early

If you want to see the most authentic part of the event, arrive in the early hours of the morning. The animals are registered and housed, the farmers work under the porticoes and you can taste the traditional bowl of broth, tripe and chickpeas before the crowds arrive.

Mid-morning: jury and weight estimate

Remain in the cattle area during jury evaluations and weight estimates. It is the best time to observe the differences between the categories and understand the livestock character of the fair.

Lunch: mixed boiled meat

Around lunch time, reach the palatenda or one of the restaurants participating in the gastronomic event. If you want to sit in a specific venue, book well in advance.

Afternoon: historic center and panorama

After lunch, walk along the ramparts, enter San Francesco if open and dedicate time to the historic center. The movement of the fair progressively decreases and the afternoon allows you to observe Moncalvo more calmly.

Because it's worth stopping for a night

The Fat Ox Fair takes place on a weekday and starts very early. Sleeping in Moncalvo or in the surrounding area the previous evening allows you to arrive under the arcades without making the journey at dawn and to experience the event from the beginning.

A second night instead allows you to transform the visit into a small winter trip. The next day you can reach Crea, Grazzano Badoglio, Ponzano Monferrato, Montiglio or other towns in the Lower Monferrato with completely different rhythms compared to the day of the fair.

The Sacred Mount of Crea

A short distance from Moncalvo is the Sacro Monte di Crea, included among the Sacred Mountains of Piedmont and Lombardy recognized by the UNESCO. The sanctuary and chapels develop on a wooded hill which offers visit routes and panoramic points.

In December the place has a particularly intimate atmosphere. The days are short and the forest can be humid, but the winter season itself makes the contrast with the confusion of the previous day's fair very striking.

Walking in the Lower Monferrato

Various itineraries among the hills depart from or pass through Moncalvo. The High Shady Hills and Clear Hills Trails connect the city to nearby villages and cross rural roads, fields and woods.

In December, however, you have to be realistic: mud, frost, fog and few hours of light can make a route that would be simple in spring challenging. Choose short itineraries, check the weather and surface and use footwear with good grip.

A weekend of Monferrato cuisine

The Fat Ox can become the leitmotif of a weekend dedicated to winter cooking. Boiled meat, agnolotti, bagna caoda, cured meats, cheeses and red wines tell the story of a gastronomy created to face the cold season and enhance what the countryside could offer.

However, avoid concentrating everything in one lunch. Distributing the experiences between the day of the fair and the following one allows you to eat better and leave room for visits and walks.

The fair with children

The presence of animals makes the Fat Ox Fair interesting for children too. Some editions have offered educational activities, visits to the stable and moments dedicated to learning about meat and its origins.

However, the context remains that of a real livestock exhibition, with large animals, agricultural vehicles and a lot of crowds. Children must always be supervised and must not approach cattle or operational areas without indication from the staff.

Photographing the Fat Ox Fair

From a photographic point of view the event is extraordinary. The large white cattle under the porches, the morning steam, the caparisons, the farmers and the crowd create very strong and immediately recognizable images.

For a complete story, alternate close-ups of the animals with images of the context. The porticoes of Piazza Carlo Alberto, the bastions and the panorama help to explain where the fair takes place and visually connect it to the Monferrato.

Always use respect towards animals and farmers. Do not use close-up flashes, do not go beyond barriers and do not obstruct the operations of the jury or officials just to obtain a photograph.

Practical information

Where it takes place

The heart of the National Fat Ox Fair is Piazza Carlo Alberto at Moncalvo. The cattle are displayed under the ancient porticoes, while the gastronomic palate, the Agricultural Fair and the market occupy Piazza Carlo Alberto and the nearby spaces; Piazza Garibaldi normally hosts the food and wine market.

How to get there

Moncalvo is located in Lower Monferrato, between Asti and Casale Monferrato. The car is the most practical means of transport, especially because the fair starts very early and because it can be useful to continue towards the surrounding towns.

Parking and roads

The presence of the animals and the displays leads to changes to the centre's road system. Arriving early also allows you to experience the preparations and atmosphere of the morning. In the central hours the influx can be very high.

Where to eat

The most characteristic solution is the boiled meat served in the Pro Loco palatenda. Alternatively you can book one of the restaurants participating in the gastronomic event. On the days of the event it is inadvisable to arrive without a reservation if you want a table in a specific place.

What to wear

December at Moncalvo can be cold, wet and foggy. Many activities take place outdoors or under open-sided porches, so you need warm shoes, a jacket suitable for winter, gloves and layered clothing.
